Der Durchschnittspreis für Fast Food in größeren US-Städten liegt mittlerweile im zweistelligen Bereich. Eine typische Mahlzeit kostet laut einem neuen Bericht von LendingTree 11,56 Dollar. Am höchsten sind die Preise in San Francisco mit 13,88 Dollar, gefolgt von Seattle mit 13,48 Dollar. In Columbus, Ohio, gibt es das günstigste Fast Food, aber Mahlzeiten kosten dort im Durchschnitt immer noch 10,01 Dollar.

Fast Food galt lange als günstigere, wenn nicht sogar gesündere Ernährungsweise. Ob Wendy’s „Biggie Bag“ oder McDonald’s „McValue“-Menü – die meisten großen Fast-Food-Ketten bieten Menüs für unter 10 Dollar an. Buying a burrito bowl or a burger will hit your wallet a lot harder these days.

What’s happening: An order at Chipotle (CMG) costs about 10% more than it did one year ago, the restaurant chain said when reporting earnings on Tuesday. That means that if a steak burrito costs $8 this time in 2021, it’s now $8.80.

It’s not the only fast food option to get more expensive. McDonald’s (MCD) increased its menu prices by about 6% last year, while Starbucks (SBUX) hiked prices in October and again in January.

So far, that hasn’t hit sales. Chipotle reported revenue of $2 billion for the final three months of 2021, beating expectations. Comparable restaurant sales climbed by more than 15%. Shares of the company are up 6.5% in premarket trading.

“We’re pretty fortunate with the pricing power that we have,” CEO Brian Niccol said in an interview with CNBC. “Our brand is really strong.” He noted a chicken burrito is still less than $8 in most US markets.

Eating out has been a significant component of surging inflation. Food away from home got about 6% more expensive last year, according to the US Bureau of Labor Statistics.

Driving the increase: Companies like Chipotle have had to pay workers a lot more to combat staff shortages. In May, the company increased the pay of its restaurant workers to an average of $15 per hour. Ingredients and transporting goods have also become more expensive.

These factors aren’t expected to dissipate any time soon. Food commodity prices have jumped 6% so far this year, according to Goldman Sachs. And workers continue to be in the driver’s seat as demand for labor stays high.

“We continue to see pressure on wages,” Niccol said on a call with analysts. “We want to make sure that we continue to be competitive on that front.”

With this in mind, restaurant executives are telling Wall Street they expect price hikes to continue.

Starbucks (SBUX) CEO Kevin Johnson told analysts last week that the company has “additional pricing actions planned through the balance of this year” in order to “mitigate cost pressures.”

Niccol also indicated additional price rises are on the table at Chipotle.

“Beef and freight and some of these other things that continue to stay elevated, if we don’t see it abate, we’ll have to take some additional pricing there,” he said.

Chipotle’s chief financial officer said they “keep thinking that beef is going to level off and then go down,” but “it just hasn’t happened yet.”

On the radar: The latest data on US consumer inflation arrives tomorrow. Climbing food prices — both inside and out of the home — are likely to be a big part of the story.

And while economists expect inflation to decline in the second half of the year, as central banks pull back support for the economy, executives in the restaurant industry don’t sound like they’re expecting much to change, at least for the time being.

Basel-Stadt wants to expand the food truck offer and has publicly tendered a permit for six locations. Markthallen AG has been awarded the contract by the canton. From spring 2019 onwards, it will complement the existing catering on Allschwilerplatz, at Ciba (corner Mauerstrasse / Gärtnerstrasse), at the Hebelschanze, at the Triangle (Erlenmattquartier), at the Novartis campus (Fabrikstrasse) and at the Voltaplatz with food trucks.

The six locations will be gradually developed, starting with lunch. Markthallen AG determines which food truck is present when, how, and where. Markthalle AG does not operate a food truck themselves.

For the planned start of operation in May 2019, food trucks can compete with their concept at the Markthalle. She selects eight to ten that meet the requirements. In particular, it wants to actively promote the use of alternative energy sources.

Objections to the petition can be raised within three months. “I do not think that there will be headwinds from other Cantons,” says Adrian Gygax, butcher and board member of the meat trade association of the Canton of Bern. He led a working group that works to protect the sausage. “The difficulty was that you had to reconcile the different needs of the producers,” says Gygax. That did cost a lot of time.

The goal is now that the Tongue Sausage regains popularity.

“We want to market the sausage better; the protection is a side effect,” says Gygax. One wants to prevent the Bernese original from being made abroad.
As soon as the period of three months has expired and no complaints are received, the Tongue Sausage will be registered in the Swiss Handelsamtblatt as a geographically protected product. From then on, the sausage may only be produced in the Canton of Bern. The consumer should enjoy geographical protection: “This is guaranteed by the fact that we have a top product that comes from the region,” says Gygax.

The History

Particularly within the Swiss Alps and different ski regions.

And that’s where it’s said Raclette came from.
Back in the day, Swiss shepherds from the French-speaking Valais region were required to bring food up to the Alps that was relatively low-cost and wouldn’t spoil simply within the hot summer month. So they brought cheese and potatoes. While the potatoes cooked within the hearth or in the fire, an enormous piece of cheese was placed close to the fire. Once it started melting the cheese was bumped off and scraped onto the baked potatoes. This wasn’t solely filling and nutritional, but additionally delicious. In French ‘to scrape’ interprets as ‘racler’ and this is often wherever the term Raclette came from.

The Equipment

Today, few houses have an open fireplace, so to simulate the process we now have Raclette Melter that holds a block or half wheel of cheese under a heating element. Once melted, the cheese is scraped off onto the prepared potatoes.
Another selection could be a Raclette Grill, which permits individual melting parts of cheese and offers a grill on top at the same time, to serve grilled vegetables, meat, chicken, or fish with the cheese. Many of those models go with a reversible grill (flattop) that may be used to create crepes or pancakes. And yet one more selection may be reborn into a mini pizza pie kitchen appliance.

The Recipes

This simple raclette formula below serves  4 people.
• 8 small/medium potatoes
• 1.5 lb. Raclette Cheese
• Buendnerfleisch (cut in paper-thin slices)
• 1 jar of pickled gherkin cucumbers (cornichons)
• 1 jar of pickled onions
• freshly ground pepper
• paprika
Wash potatoes and, with skins on, boil in a pot filled with salted water for about 20 min. Test with a knife if the potatoes are done. Keep hot to use in an insulated potato bag. In the meanwhile take away the rind of the cheese and delve 1/16″ thick slices employing an adjustable wire slicer. Arrange gherkins, onions, and Buendnerfleisch on a platter and set aside until required. Turn the raclette on to start to heat up (allow for a minimum of five minutes before using). For raclette grills: every guest takes a slice of cheese, places it in their pan, and slides it under the raclette grill to melt. It takes minutes to soften to a creamy consistency and three minutes for an additional crispier high. In the meantime take a potato, place it onto your plate and cut it into a few pieces, remove the pan from under the grill once it’s reached its preferred consistency, and hold the pan onto its face to scrape the cheese out, using your wooden spatula. For a raclette, each guest prepares potatoes and side dishes on their own plates. When the cheese starts melting on the wheel, scrape the cheese onto the plate—season it with freshly ground pepper and paprika.
